Muamba de galinha
Angolan chicken stew with palm oil, tomato, pumpkin and okra, served with funge or rice.
Muamba de galinha is an Angolan chicken stew with a rich palm-oil sauce, okra and vegetables. This four-serving version doubles the quantities from a recipe for two; hands-on preparation time is an estimate. Serve it with funge or rice.
Method
- 01
Marinate the chicken
Mix the lemon juice with 2 cloves of garlic, the salt and the hot paprika. Coat the chicken with the mixture and marinate for at least 1 hour.
60 min - 02
Brown the chicken
Heat the palm oil in a large pot over medium heat. Brown the thighs on all sides, working in batches if needed.
10 min - 03
Cook the aromatics
Add the onion, the remaining 4 cloves of garlic and the tomato. Cook, stirring occasionally, until the onion softens and the tomato begins to break down.
5 min - 04
Simmer the chicken
Return the chicken to the pot and add the stock. Cover and simmer gently until the chicken is tender and fully cooked.
60 min - 05
Add the pumpkin and okra
Stir in the pumpkin and okra. Cover again and cook gently until the vegetables are tender and the sauce has thickened.
15 min
