Zambian Nshima
Thick maize-meal porridge cooked until firm and served alongside vegetables or stews. Makes about 4 servings.
Nshima is a Zambian staple made with maize meal and water. This version uses 3 cups of maize meal and 4½ cups of water; the serving count and preparation time are estimates.
Method
- 01
Make a light porridge
Mix a small portion of the maize meal with 1 cup of the water to make a smooth paste. Bring the remaining water and the salt to a boil in a pot, then add the paste while stirring.
3 min - 02
Thicken the nshima
Gradually add the remaining maize meal, stirring vigorously and folding the mixture over itself so it cooks evenly.
7 min - 03
Finish cooking
