Cook the potatoes, kale, and sausage
Put the potatoes and water in a pot and add the salt. Layer the kale and smoked sausage on top. Cover the pot, bring the liquid to a boil, and cook at a gentle simmer until the potatoes are tender.

Crisp the bacon
While the vegetables and sausage cook, fry the bacon in a pan over medium-high heat until crisp.

Mash and serve
Remove the sausage from the pot and set it aside. Drain the vegetables, reserving some of the liquid. Add the butter and mash the potatoes and kale to a rustic consistency; stir in a little of the reserved liquid if needed. Mix in the bacon and serve the mash with the sausage.
