Burkinabe Riz Gras
Rice cooked in one pot with chicken, tomato, onion, garlic, and chili. The oil and cooking broth infuse the rice with flavor.
Riz Gras is a rice dish known in Burkina Faso and also found in other West African cuisines. This version combines rice and chicken with a tomato base, habanero chili, and a stock cube; everything cooks in the same pot until the rice is tender.

Prepare and brown the chicken
Heat the oil in a large pot over medium heat. Add the chicken and brown it on the outside, stirring occasionally. Add the chopped onion and garlic and cook until the onion begins to soften.

Make the tomato base
Add the chopped tomatoes, tomato paste, and habanero chili to the pot. Stir and cook until the tomatoes begin to break down and the mixture thickens.

Cook the rice with the chicken
Add the rice, water, and stock cube. Stir to distribute the ingredients and bring to a gentle simmer. Cover the pot and cook over low heat until the rice is tender and has absorbed the liquid. If needed, adjust the time to the rice package instructions.

Take the pot off the heat and leave it covered for a few minutes. Stir gently to loosen the rice and serve hot.
