Chilean leche asada
A Chilean milk-and-egg dessert with caramel and a browned top. Makes 5 servings.
This version of Chilean leche asada is baked directly, without a water bath, so the top can brown. Other recipes use a water bath; this one follows the direct-baking method.
Method

Make the caramel
Put the granulated sugar for the caramel and the water in a saucepan. Cook over low heat without stirring until the caramel turns golden.

Coat the baking dish with caramel
Pour the hot caramel into an ovenproof dish and carefully spread it over the bottom.

Mix the leche asada custard
In a bowl, gently mix the eggs, milk, and granulated sugar for the mixture, taking care not to create foam.

Bake
Pour the mixture into the caramel-coated dish. Bake in a preheated oven at 180 °C for 30 to 35 minutes, until the top is golden.

Cool and refrigerate
Remove the dish from the oven and let the leche asada cool to room temperature. Then refrigerate it for at least 2 hours before serving.
