Congo-Brazzaville Chicken Moambe
Chicken stew with a creamy peanut and palm-oil sauce, tomatoes, spices, and okra. Serves 4; preparation times are estimates.
Chicken moambe is made in several versions across the Congo region. This recipe combines peanut butter and palm oil in a thick, aromatic sauce, finished with okra. Hands-on preparation time is an estimate; the chicken rests in its marinade for 30 minutes and cooks for about an hour.
Method
- 01
Marinate the chicken
Mix the chicken with the cumin, smoked paprika, and lemon juice. Leave it to rest in the refrigerator for 30 minutes.
30 min - 02
Brown the chicken
Heat the palm oil in a large pot over medium-high heat. Brown the chicken on both sides, about 3 minutes per side, then transfer it to a plate.
6 min - 03
Soften the onion
Reduce the heat to medium. Add the chopped onion to the same pot and cook, stirring occasionally, for about 5 minutes.
5 min - 04
Add the garlic and ginger
Stir in the chopped garlic and ginger. Cook for about 2 minutes, stirring, until fragrant.
2 min - 05
Cook the tomatoes
Add the chopped tomatoes and cook for about 5 minutes, stirring, until they begin to soften and release their juices.
5 min - 06
Simmer the chicken in the sauce
Return the chicken to the pot. Mix the peanut butter with the water until smooth and pour it in with the chili. Bring the sauce to a boil, reduce the heat, cover, and simmer for 30–45 minutes, until the chicken is tender and fully cooked.
45 min - 07
Finish with the okra
Add the chopped okra and cook for about 5 minutes more, until tender and the sauce is gently bubbling again.
