Kyrgyz Shirin Paloo with Dried Fruit
A rice pilaf with carrots, onions, dried apricots, raisins, and prunes, cooked until the rice absorbs the liquid.
This Shirin Paloo combines rice with sautéed vegetables and a mixture of dried fruit. The four servings and preparation and cooking times are estimates; the amount of water starts from the proportion given for the recipe.

Sauté the vegetables
Heat the oil in a wide pan over medium heat. Add the onions and carrots and sauté until softened.

Cook the rice
Add the water to the vegetables and bring it to a boil. Stir in the rice, salt, and cinnamon. Boil until the rice has absorbed almost all the water.

Add the dried fruit and finish
Stir in the dried apricots, golden raisins, and prunes. Reduce the heat, cover the pan, and cook until the rice is tender and has absorbed the remaining water.
