Paraguayan sopa
Savory corn bake with onion, eggs, milk, and Paraguayan cheese, baked until golden.
Despite its name, sopa paraguaya is served as a savory bread. This version uses Paraguayan cheese. It makes approximately 8 servings; the times given are estimates.

Preheat the oven
Preheat the oven to 177 °C.

Cook the onion
Heat the vegetable oil in a pan. Add the onions and cook until translucent.

Mix the batter
In a bowl, mix the corn flour with the milk. Add the cooked onions, eggs, and grated Paraguayan cheese, and stir until evenly combined.

Bake
Pour the mixture into a greased baking dish and bake at 177 °C for about 40 minutes, until the top is golden. Check the center with a toothpick before removing it from the oven.
