Simple Chinese Congee
Chinese rice porridge slowly cooked with ginger and scallion, using one part rice to eight parts water.
Congee is a Chinese dish of rice cooked in plenty of water until very soft and creamy. This simple version follows the traditional combination of water, ginger, and scallion; it is commonly eaten for breakfast.
Method

Rinse the rice several times, between 3 and 5, in cold water until the water is less cloudy. Drain it well.

Put the water, ginger, and Chinese scallion in a pot. Bring to a boil.

Add the drained rice. When it comes back to a boil, lower the heat and simmer gently for about 60 minutes. Stir occasionally to keep it from sticking.
