Kyrgyz Kuurdak with Meat and Vegetables
A hearty stew of browned meat, onion, pepper, and cabbage, simmered until the vegetables are tender.
Kuurdak is prepared in different ways across Central Asia. This version brings meat, onion, and vegetables together in one pot; serve it hot, freshly made.
Method
- 01
Brown the meat
Heat the vegetable oil in a large pot. Add the meat pieces and brown them, stirring so they cook on all sides.

Add the vegetables and simmer
Add the onions, green bell peppers, cabbage, ground red pepper, black pepper, salt, bay leaves, water, and tomato paste. Bring to a boil; lower the heat, partially cover, and simmer for 30–45 minutes, until the liquid has been absorbed and the vegetables are tender.

Remove the bay leaves and serve the kuurdak hot.
