Cook the fish
Put the fish in a saucepan with the onions, tomato, vinegar, lemon or lime juice, water for the fish, and butter for the fish. Bring to a gentle simmer and cook for 20–30 minutes.

Cook the okra
While the fish cooks, bring the water for the fungi to a boil in a medium saucepan. Add the okra and salt; cook over medium-high heat for about 4 minutes, until softened.

Add the cornmeal
Lower the heat. Gradually add the fine yellow cornmeal, whisking vigorously to prevent lumps. When the mixture is smooth, add the butter for the fungi and keep whisking.

Finish the fungi and serve
Keep whisking until the fungi is smooth and thick. Serve it hot alongside the fish.
